Independent Restaurant Operator Brief

Five useful minutes for the people carrying the shift.

One concise weekly note on operating systems, cost leakage, staffing, equipment decisions and useful opportunity signals. No daily inbox ambush.

Issue 001

The shift does not end when the manager clocks out.

Fix the handoff gap

Every unresolved item needs five fields: issue, owner, next action, deadline and status. Without an owner and next action, it is not a handoff.

Count repeated leakage

Track recurring overportioning, forgotten prep, emergency purchases, duplicate ordering, avoidable comps and downtime—not only dramatic waste.

Assign accountability

Opening and closing systems should capture ownership and exceptions. A long checklist nobody closes out becomes wallpaper.

One useful operating question every week.

What problem in your restaurant had to be rediscovered twice because nobody owned the next action?
